Bayou Teche Brewing and Tony Chachere’s have combined forces to release Gumbo Stout, a craft beer aimed at capturing the spirit of the signature Louisiana dish. Brewery founder Karlos Knott says the beer was brewed around the flavor of a chicken and sausage gumbo.

And Knott says it gives the beer a roasted and smoky flavor from both the roux and barley. He says those flavors are accentuated by the salt, cayenne, and black pepper.
