At Christmas five years ago LSU grad Katelyn Williams came home and told her family she was going to make ice cream. When she learned sister couldn’t have dairy anymore, it spawned what is now Kate’s Ice Cream, a dairy-free, gluten-free ice cream business in Portland, Oregon.

Williams graduated from LSU in 2013. She studied Spanish, psychology, and communications and says she always loved the Dairy Store on campus. Admittedly her first dairy-free ice cream recipes were not ideal, but today they are extremely popular. Williams likes to incorporate local flavors into her creations.

In addition to coconut milk Williams also uses cashew milk. The ice cream is all plant-based and the line includes basic flavors like vanilla and chocolate. One flavor she created was peaches and cayenne. Williams is from Lafayette after all so a seasoned ice cream seamed natural as well as…

Williams’ goal is to have nationwide shipping available in a year so her native state can enjoy her dairy-free and gluten-free creations.

More than 150 food establishments have been cited since the enforcement of the foreign shrimp and crawfish labeling law began on September 1, with about half of those being restaurants in the Baton Rouge and New Orleans area. Larose Representative Truck Gisclair fought hard for the measure.

Some establishments are anticipating the law will create a hurdle when it comes to seasonal availability. Gisclair says that is something that businesses will have to be prepared for.

The law is enforced by the Louisiana Department of Health and a citation is consider a minor violation and are not an issue of the food’s safety. Gisclair says it is about creating transparency for consumers.

After a violation, LDH provides education on how to fix the problem with a large sign or by paperclipping a notice to menus about the origin of the seafood.

President Donald Trump tweets encouragement for Louisiana Republicans to vote for either Ralph Abraham or Eddie Rispone in the gubernatorial primary, calling them both “great”.

While the GOP stresses unity, Eddie Rispone has vaulted past Ralph Abraham for 2nd place on the back of some tough anti-Abraham attacks. UL Lafayette Poli Sci Professor Pearson Cross says Abraham needs to return fire.

On the Republican side, the campaign has been defined by Abraham racking up local endorsements, while Rispone blasts the airwaves with his ten million dollars self-financed warchest.

The state party warned against the kinds of intraparty attacks Rispone is now running, saying it could lead to a second Edwards term. Cross says that’s a serious concern.

Recent polls put Governor Edwards in the upper 40s with roughly 15 percent of voters still undecided.

Rispone’s attack ad gambit appears to have paid off in that he’s now the top polling Republican, but Cross says if Edwards dodges a run-off, expect the knives to come out for the Baton Rouge businessman.

Abraham has so far refused to go on the attack, only calling the accusations that he was disloyal to the President a lie.

Chevron is awarding up to 375,000 dollars to state teachers in the form of 1,000 dollar grants aimed at building up the STEM experience in Louisiana classrooms.

H.L. Bourgeois High Math Teacher Melissa Williamson says it’s a big help because STEM classrooms can be incredibly expensive to maintain due to the need for hands-on work.

If awarded the 1,000-dollar grant can go towards just about anything classroom related.

Williamson says the investment from one of the largest energy companies on earth makes sense considering how vital those skills will be in the future.

Louisiana is an energy economy, and Williamson says emphasizing STEM skills increases the chances they can stay at home and join the local economy after they finish with school.

Last month was the warmest September on record for the state dating back to 1895.  State climatologist Barry Keim says after calculating a preliminary value for the entire state, the state exceeded the previous record by half a degree.Keim credits the heat spike to a lack of cold front activity.

The Ragin Cajuns and head football coach Billy Napier have agreed to a contract extension that keeps Napier on contract through the 2023 season. UL-Lafayette is off to a four-and-one start, after winning the Sun Belt Conference Western Division last season. The Cajuns next game is a Wednesday, October ninth, versus Appalachian State.

ULM hosts 23rd ranked Memphis this Saturday. The Tigers are 4-and-0, while the Warhawks are coming off a 30-17 win over South Alabama. Memphis is believed to be the first ranked opponent to visit Malong Stadium in the NCAA Football Subdivision Era. Kick-off is at 2:45.

The Saints will begin preparations for Tampa Bay tomorrow. The Bucs are coming off an upset win over the Rams and remember last season.

In the high school football polls, Calvary Baptist has moved to the Top spot in Class One-A. John Curtis is number one in Five-A, while St. Thomas More is number one in Four-A. The Cougars host the Catholic Bears on Friday as Catholic is ranked second in Five-A.

A St. Landry Parish man is dead a week after falling out the back of a pickup truck that travelling down LA 103. 38-year-old Fredrick Freeman was in the back of the truck when for some reason he fell off the back and slammed his head on the concrete. He was rushed to the hospital in critical condition, but the injuries turned out to be too severe. Neither the driver nor Freeman is thought to have been impaired at the time.

A Monroe dog trainer was arrested after allegedly faking the death of one of his client’s 25,000 dollar duck hunting dogs so that he could sell the pup to a dog club. Ouachita Parish Chief Deputy Marc Mashaw says about a week ago 44-year-old Lester Langley called his clients and told them the dog had died, and he had buried it, but he refused to provide the body or allow the clients to see the grave.  Mashaw says when deputies arrived to investigate the matter, Langley couldn’t produce a body…

LSU Football Coach Ed Orgeron says the Tigers defense will be challenged this Saturday when they host Utah State. Orgeron says the Aggies spread offense performs at a faster tempo than any opponent they’ll see this season. That might not be good news for an LSU defense allowing 23 points a game. Orgeron says they used the bye week to spend time on tackling and improving players’ technique…

Orgeron hopes the Tigers can get a couple of injured players back on the field. He says defensive end Rashard Lawrence and linebackers K’Lavon Chaisson and Michael Divinity are gimpy, but they are back at practice.

Training camp is underway for rookie sensation Zion Williamson and the Pelicans as they gear up for the 2019-2020 season. Williamson is already considered one of the best players in the NBA and he’s yet to play a game in the association. Zion says he can’t focus on the outside noise…

The Pelicans first preseason game is Monday against Atlanta. The regular-season opener is October 22nd in Toronto.

The Saints are off today after beating Dallas 12-10 on Sunday night. It’s the Black and Gold’s first win without scoring a touchdown since 1998. New Orleans defense has risen to the occasion since Drew Brees went down with a thumb injury. Safety Von Bell has really stepped up his game, against Dallas he had 10 tackles and leads the team in tackles with 31. New Orleans is back at the Dome on Sunday to host Dallas.
